KITCHEN MAKE OVER AT CRU
More than four years on and CRU Restaurant and Wine Bar in Hoxton is
still a firm favourite with locals and visitors alike. However, CRU’s
management do not rest on their laurels and are constantly working hard
to maintain the high standards the restaurant has established.
Offering delicious and predominantly Mediterranean cooking, the kitchen
has gone from strength to strength under the helm of Head Chef Kathy
Goddard, previously a Sous Chef at the Savoy kitchens. With an
increasingly busy kitchen and expanding bar, tapas and A la Carte
menus, CRU last year decided to hire Consultant Chef Elaine Chalmers in
order to evaluate and streamline the menus. Elaine, who has previously
set up and managed hugely popular kitchens at the Electricity
Showrooms, Smallfish Café and is known through the London party scene
for her successful catering business, has spent the last year working
closely with Kathy and the rest of the CRU staff.
Says Kathy; “It has been great working with Elaine – especially in the
busy end-of-year period. It has been really helpful to have someone
coming in with completely fresh eyes and see things more objectively,
something I’m often too busy to allow myself to do. Elaine has been
monitoring the menus and kitchen output over the past couple of months
in order for us to evaluate our menus, get a clearer idea of what works
best and essentially understand our customers better, which is what
it’s all about.”
The new menu shows clear signs of a more streamlined and focussed
approach and includes such treats as mussels in coconut & coriander
chilli sauce, roast duck on puy lentils, Buccleuch rib eye steak,
mushroom stroganoff and banoffee pie.
CRU’s extensive wine list still counts as one of the most impressive in
the area and the regular wine tastings are as popular as ever. The next
one, a Champagne tasting, will take place at CRU on January 23rd.
